Grandma's Minestrone Soup



Very easy to cook! Some veggie preparation  but it wasn't too troubling. Its like a crockpot recipe (throw everything in), except you don't have to wait 6 hours for it to finish cooking.

I combined two recipes, to get a good mixture of ideas and ingredients. (I do that alot)

Ingredients

Veggies



  • 4 medium carrots, chopped
  • 5 medium minced garlic cloves
  • 1 cup frozen cut green beans
  • 2 cups chopped onions
  • 2 stalks sliced celery
  • 1 medium diced bell pepper

Cans

  • 1 can tomato sauce
  • 1 (15 ounce) can chopped tomatoes
  • 1 can kidney beans, rinsed and drained
  • 1 can garbanzo beans or chickpeas, rinsed and drained
  • 1 medium sliced zucchini

Other

  • 2 tablespoons olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 2 cups uncooked small pasta
  • 3 beef bouillon cubes
  • 3 cups water
  • Grated Parmesan cheese, optional


Directions


In a large pot: saute the onions, carrots, and garlic in olive oil for five minutes over medium heat.


Add celery, carrots, oregano, basil, and salt and cook for ten minutes.

Add bell pepper, zucchini, water, beef bouillon and tomato sauce. Cover the pot and simmer for 15 minutes.


Stir in the pasta and beans. Cook, uncovered, for 8-10 minutes or until pasta is tender, stirring occasionally.

Add green beans and the can of diced tomatoes; cook 5 minutes longer or until heated through. Garnish with  Parmesan cheese, parsley, and ground black pepper if you want.

5 Cheese Pizza


WITH VEGGIES!

Ingredients

Any pre-prepared cheese pizza. (Or you can make your own cheese pizza with pizza dough and cheese) For mine, I choose Red Baron Thin and Crispy pizza.
1/4 of a Zucchini
1 1/2 Cups of Frozen Broccoli
Half of a White Onions
Half of a Green Bell Peppers
Ranch Dressing
(optional) Shredded cheddar cheese

Directions

Get your pizza out on a baking pan.
Slice your zucchini into thin round slices. Spread it over the pizza like you would pepperoni slices.
Cut up the Onions & Green Bell Peppers into slices or dices. Spread over pizza.
Place broccoli florets all over the pizza.
Sprinkle the cheese over the vegetables.
And drip Ranch over the pizza.
Follow directions on how long to cook the pizza.
Take out, let it cool off, and EAT!

Source: Knowledge of knowing which veggies taste really good with cheese! Zucchini Pasta is really tasty (if i can find the recipe, I'll post it), so I knew that Zucchini would go well in Pizza. Broccoli is known to be tasty with cheese. And I've made ranch dressing pizza before with chicken, and that was GREAT! Plus, ranch on top of broccoli and zucchini sounded like a tasty idea. Kinda like a salad pizza.

Lesson learned here. Buy a cheap cheese pizza, and make your own awesome pizza without the hassle of making your own dough!

Strawberry and Raisin Muffins!



Ingredients

2 cups Bisquick
1/3 cup sugar
2/3 cup milk
2 tablespoons vegetable oil
1 eggs
3-4 Strawberries, each one sliced up into 4s.
3/4 cups of Raisins

Directions

Heat oven to 400 degrees.
Grease muffin pan well.
Stir all ingredients except blueberries in medium bowl, just until moistened.
Fold in raisins.
Divide batter evenly into small muffin tin (12 count). I made 18 muffins out of this.
Put one slice of strawberry on top of batter!
Bake 7 to 10 minutes or until golden brown.
Cool slightly and remove from pan to wire rack.

This was really tasty! Good snack for slow work day. :)

Gnocchi Pasta!




I made the sauce only for my gnocchi pasta, because I went and bought pre-made gnocchi at Publix! Needed to save time, got a busy schedule this week. 

Ingredients:

Sauce

  • tablespoons olive oil
  • garlic clove, minced
  • roasted red peppers, peel, seeded and cut into julienne
  • tablespoon chopped fresh parsley
  • 1/4-inch thick slices smoked mozzarella, cubed
  • tablespoons shredded fresh basil
  • cups fresh or canned tomato sauce
  • Coarse salt and freshly cracked black pepper

To put on cooked pasta

  • Grated Parmesan, to taste
  • 1/4-inch thick slices smoked mozzarella, cubed
  • tablespoons shredded fresh basil

Directions:

Sauce

  1. Heat the olive oil in a large skillet.
  2. Add the garlic and saute for 1 minute.
  3. Add the roasted red peppers and the parsley.
  4. Add the cubed smoked mozzarella and the basil.
  5. Add the tomato sauce and simmer.
  6. Season to taste.

To make the pasta

  1. Bring 6 quarts salted water to a rigorous boil.
  2. Add the gnocchi, stirring gently and continuously with a wooden spoon.
  3. Cook the gnocchi until they rise to the surface, about 1 minute.
  4. After they rise to the surface continue cooking them for an additional minute.
  5. Remove the gnocchi from the water with a slotted spoon or a skimmer, and transfer to the saucepan with the sauce.
  6. Stir until the gnocchi are covered with the sauce.
  7. Plate and garnish with freshly grated Parmesan, cubed smoked mozzarella and the shredded basil.
I wouldn't say it was the best Italian thing I've eaten, but it was good. I think for ME, the pasta could have been better. I will try again using a different pasta sauce. But give it a try anyways! You may like it!

Chicken Tortilla Soup

Crockpot recipe from Reddit!


Makes 6-8 servings
  • 4 Chicken breast halves
  • 2 15-oz. cans black beans undrained
  • 2 15-oz. cans Mexican stewed tomatoes, or Rotel tomatoes
  • 1 cup salsa
  • 1 4-oz. can chopped green chillies
  • 1 14.5-oz. can tomato sauce
  • tortilla chips
  • 2 cups grated cheese
  1. Combine all ingredients except chips & cheese in large slow cooker.
  2. Cover. Cook on Low 8 hours.
  3. Just before serving, remove chicken breasts & slice into bite-sized pieces. Stir into soup.
  4. To serve, put a handful of chips in each individual soup bowl. Ladle soup over chips. Top with cheese.
