I made the sauce only for my gnocchi pasta, because I went and bought pre-made gnocchi at Publix! Needed to save time, got a busy schedule this week.
Ingredients:
Sauce
- 2 tablespoons olive oil
- 1 garlic clove, minced
- 2 roasted red peppers, peel, seeded and cut into julienne
- 1 tablespoon chopped fresh parsley
- 4 1/4-inch thick slices smoked mozzarella, cubed
- 2 tablespoons shredded fresh basil
- 2 cups fresh or canned tomato sauce
- Coarse salt and freshly cracked black pepper
To put on cooked pasta
- Grated Parmesan, to taste
- 2 1/4-inch thick slices smoked mozzarella, cubed
- 2 tablespoons shredded fresh basil
Directions:
Sauce
- Heat the olive oil in a large skillet.
- Add the garlic and saute for 1 minute.
- Add the roasted red peppers and the parsley.
- Add the cubed smoked mozzarella and the basil.
- Add the tomato sauce and simmer.
- Season to taste.
To make the pasta
- Bring 6 quarts salted water to a rigorous boil.
- Add the gnocchi, stirring gently and continuously with a wooden spoon.
- Cook the gnocchi until they rise to the surface, about 1 minute.
- After they rise to the surface continue cooking them for an additional minute.
- Remove the gnocchi from the water with a slotted spoon or a skimmer, and transfer to the saucepan with the sauce.
- Stir until the gnocchi are covered with the sauce.
- Plate and garnish with freshly grated Parmesan, cubed smoked mozzarella and the shredded basil.
I wouldn't say it was the best Italian thing I've eaten, but it was good. I think for ME, the pasta could have been better. I will try again using a different pasta sauce. But give it a try anyways! You may like it!
